Fenugreek, commonly known as methi seeds provide a tangy flavour and powerful aromative scent to vegetable and lentil dishes. Fenugreek seeds are used in a wide range of curry powderds and can also be used as a fresh herb. Fenugreek is always roasted before usage. Light roast gives a mellow flavour and dark roast will give a bitter flavour. Sometimes the seeds are soaked overnight so they become easier to combine with curry paste.

Fenugreek are used and grown throughout South Asia. The fenugreek plant grows 2 feet tall with light green leaves and white flower. Each fenugreek pod gives 10-20 seeds which are rich in protein, vitamins and minerals.
